Melissa's Loco-Coco Cream Pie

(This coconut cream pie is crazier than the guys we date!)

Ingredients:

  • 1 can coconut milk
  • 1 & 1/3 cup whole milk or cream
  • 2 eggs
  • 1 cup sugar
  • 1/2 cup flour
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla
  • baked pie crust
  1. Combine coconut milk + cream in a saucepan over low heat
  2. Whisk in eggs to combine with milk mixture
  3. Add sugar, flour, salt, vanilla and whisk to combine
  4. Cook mixture until thickened (whisk occasionally to avoid burning).
  5. Pour mixture into baked pie crust and allow to cool a bit (half hour or so)
  6. Once done – cover with plastic wrap and refrigerate until very firm.

Garnish with whipped cream and toasted coconut as desired!
